University of Kentucky and Purdue University to study sustainable maple syrup production

According to a news release from the University of Kentucky, there’s growing demand for environmentally-friendly goods – including maple syrup. The UK-Purdue study will take place in central hardwood regions in Kentucky and Indiana with an aim of developing ways to improve energy efficiency in production and sustainable forest management. The U.S. Department of Agriculture is funding the study. A previous Purdue study found consumers are willing to pay more for maple syrup sourced from sustainably managed forests.
